In detail, I like stealth, daggers, swords, assassination, stealing, running, versatility and speed.
I don't like full stealth nor full head on combat, more like a little bit of both. For example, Sniper: Ghost warriors seems really boring to me because you just snipe, stealth, snipe. I like Assassin's creed 2 if you want an example of what I like. Also, if possible, I prefer using swords, daggers to snipers. I don't know why, sniping just seems really boring to me :P
And lastly, I own Modern Warfare 2, Assassin's Creed 2, and Uncharted 2: Among Thieves.

O and btw, if you want to know why I didn't just play the thief classes in mmorpgs, it's because it's either the community is retarded, the graphics suck, or the gameplay gets boring, OR it's a freaking grindfest.

Well Dragon Age plays alot like MMORPGs. Its very point and click based rather than manually aiming and striking. And you get a bar of abilities to use (or a cycle in the PS3/360 versions).
Oblivion is probably the best choice for you. You pick a set of main skills, but then your not confined to doing those, so if you choose light armour as one of your main skills your not confined to using light armour. So if you like being able to expand in what your doing then thats a positive. And the gameplay is very manual, so you have to aim and then you can strike in different ways. So you tap the strike button and you do a light and quick slash or a weak shot with a bow, or you can hold it for a big swing or a longshot. And you also get to use magic abilities like healing and conjuring and firing things and so on. Generally the gameplay is alot more interesting.
The only problem with Oblivion is that it can become somewhat of a grindfest. For example I wanted to get my sword skill up to use a better sword, so I had to keep on summoning skeletons and knocking them down over and over and over. And while it is cool that you can do that to get your skills up its somewhat annoying and boring when you get to the really high levels.
Another reason why Oblivion is probably the better option. Dragon Age has a very linear storyline. You start off on a certain path and then you have to do a few things seperately but then it all joins up back on the same line again. In Oblivion there are multiple different directions you can go. There is the main storyline which has its own group of missions, and then there is the Thieves guild missions, the Dark Brotherhood, the Fighters guild, The Mages guild and the Arena. And then to add to that there are about a dozen side missions from random people in every city. So if you like stealth and thievery then you can just do the Dark Brotherhood and Thieves Guild, but if you want to do more there is a whole lot more.

I would STRONGLY recommend Oblivion, the thieves guild and assassins guild would be right up your alley. They have many varied missions and plenty of hours worth of gameplay. i would say elder scrollsover dragon age based on your play style. dragon age is largely about p[arty combat. where oblivion is about a single warrior whom you customize.
demon's souls is another RPG you should look at. you can be as stealthy, or unstealthy as your want. swords and daggers your thing? you can do that too. plus you get a gnarly online mode that has an MMO vibe(you can have up to 2 friends join you along your quests), while still retaining the single player charm.
personally deomn's souls is the better game between the 3. although oblivion is ridiculously huge, i never could get behind the clunky combat system. and dragon age is far too talky for me.
Well if you have an xbox then chatting shouldn't be a concern, xbox rpg's are about the gameplay. Very rarely in only games like Fable can you have multiplayer. Even then no xbox game to my knowledge is a literal mmorpg... If you're asking Dragon Age: Origins versus Oblivion then why did you even mention sniping?!!?!?!?!? From what I understand you're going to like Oblivion's stealth classes, especially since you can make your own classes. Dragon Age's stealth class is pretty bad, the only thing you do different with the rogue on DA:O is go invisible for five seconds and sneak around the back of your enemies and stab them in the back, but even then a warrior class gets a bonus from attacking from behind. A flanking bonus...but don't get me wrong, Dragon Age is my favorite RPG!
